The syphon was invented by Loeff of Berlin in 1830, but in 1840 Mme. Vassieux of Lyons, France successfully commercialized the system. Over time, the Japanese perfected this method, and Hario is the high quality producer of the glass contraption you see below.
The beauty of the Syphon Method is that by keeping heat temperature consistent while brewing, it highlights the flavors of the bean. As it cools it opens up like a wine, giving different flavor notes. Popular notes include cranberry, raspberry, chocolate, caramel and more.
